Pescatarian Taco Tuesday
In honor of the New Year, my family and I decided to switch to a pescatarian diet and WE LOVE IT! Our Tuesday traditions have gotten even more flavorful with this Shrimp Taco Recipe with Pineapple Salsa!
Below is the recipe:
Grilled Shrimp Seasoning (let marinade for an hour before cooking)
- 1 pound of shrimp
- 1 lime
- 1 tsp. salt
- 1 tsp. chili powder
- 1/2 tsp. Tony Chacheres
- 1/2 tsp. black pepper
- 1/4 tsp. cumin
- 1/2 tsp. garlic powder
Pineapple Salsa
- 7 pineapple chunks
- 1 bell pepper
- 1/2 lime
- 1/3 cup red onion
- 1/2 cup cilantro
- 1 jalapeño (without seeds)
- 1/2 tsp salt
Grill pineapple chunks; chop bell pepper, red onion, cilantro, and jalapeño; add bell pepper and jalapeño to skillet and cook for 2 min; remove from grill and let cool; chop pineapple chucks once grilled; mix all ingredients into a bowl; add lime and season with salt
Tip for "frying taco shells": USE AVOCADO OIL
